TOFU RECIPES

There was a time when tofu (beancurd) an alien ingredient for most of us. Then, gradually it managed to find its way into our kitchens and menus. It is an excellent source of protein and very popular with people who follow a certain diet. In spite of all this it still confuses most people sometimes, when it comes to experimenting with this ingredient. Tofu is actually something that you can bung into most recipes and it will work. Here are a few recipes you can easily try at home and won’t regret.

1TOFU PARATHA

Ingredients:

200 gms tofu (grated)
7-8 black olives
Some coriander leaves
3-4 green chilies (finely chopped)
1 tsp cumin powder
2 tsp red chili powder
1 tsp dry mango (amchoor) powder
Salt to taste
Butter/Ghee
Dough (wheat flour/refined flour)

Method:
Mix all the ingredients and make the filling. Make a small roti and place the filling in the centre. Use water to seal the sides and roll into a paratha. Grease with butter/ghee. Serve hot with pickle and curd.

 

2SIZZLING CHILLY TOFU

Ingredients:

Oil
300 gms tofu (cut into cubes)
1 small piece ginger (finely chopped)
4-5 cloves garlic (finely chopped)
1 medium sized onion (chopped)
2 fresh red chilies (finely chopped)
3 tbsp sweet chili sauce
2 tbsp dark soya sauce
Salt to taste
½ cup vegetable stock
1 tsp honey
1 medium sized capsicum (chopped)
3 tbsp corn starch
1 packet glass noodles

Method:
Heat oil in a pan; add ginger, garlic and the onions. Cook until the onions are translucent. Add the red chilies, sweet chili sauce, dark soya sauce and the tofu. Cook on a high flame for a minute. Add the salt, vegetable stock, honey and capsicum and cook well. Now add the corn starch and mix until the sauce is thick. Pour some boiled water over the glass noodles. They will cook instantly. Place the noodles in the serve plate and top with chili tofu. Serve hot.

 

3PANEER AND TOFU SHAWARMA

Ingredients for the marinade:

3 tbsp tahini paste
3 tbsp bell pepper paste
2 tbsp green chili paste
3 tbsp ginger-garlic paste
4 tbsp tomato paste
2 tbsp mixed pickle
Salt to taste
3 tsp black pepper powder
3 tbsp olive oil
Other Ingredients:
200 gms paneer (cut into fingers)
200 gms tofu (cut into fingers)
Oil to fry
1 medium onion (sliced)
1 medium tomato (sliced)
Tortillas/chapatti (according to need)
Tahini sauce

Method:
Mix all the ingredients of the marinade together. Put in the paneer and tofu fingers. Leave it for an hour to marinate. Now, shallow fry the paneer and tofu fingers on medium heat until they look golden. For the assembly, apply tahini sauce on the tortilla, place the fingers, onions and tomatoes and roll.

 

4SOYA AND TOFU KEBABS

Ingredients:

1 cup soya mince
1 cup grated tofu
1 cup onion (finely chopped)
2-3 green chilies (finely chopped)
1 tsp turmeric powder
1 ½ tbsp chaat masala
2 tbsp garam masala
3 tbsp ginger-garlic paste
1 tbsp red chili powder
½ cup flattened rice (poha)
½ cup sabudana (tapioca)
Salt to taste
Some coriander
Oil to fry

Method:
Mix all the ingredients in a bowl. Shape them into kebabs. Now, shallow fry on medium flame until crisp from the outside. Serve hot with mint chutney.
